Being from a hispanic background Arepas are a staple in our homes but they are very carb heavy with no other macro nutrient so I modified the recipe to make it a bit less carb heavy, increased the fiber content and added protein for a more balanced ingredient. Beauty of these are that you can fill them with whatever your little heart desires.

Preheat the oven to 350F
mix all the ingredients except the water in a bowl until well mixed
slowly mix in the water until you form a dough, you don’t want it to be too wet or too dry. The dough will start to dry out quickly
divide into portions and warm up a pan or griddle; place arepas and cook for about 5 min each side. At this point you can freeze them or continue cooking them on the pan for about 10 min on each side. You can also place them in the oven for about 15 min.
serve and fill with your favorite ingredients
*the arepa will be “soft” inside, this is normal
